I love this Spelt flour together with the Doves Farm Rye Wholemeal and Rye White Flour to bake my sourdough bread. I can also combine it with the Doves Farm White Spelt Flour to make a lighter bread. All 4 kinds of Doves Farms flours are the best Organic flours to bake with. Highly recommended.
