We use a special breed of chicken which is designed to grow slowly and be active so when the doors open to their sheds in the morning they head outside to explore. This active ranging on their pasture allows them to exercise, building muscle, and allowing their meat to develop natural flavour. The leg meat is dark and firm with great taste and flavour. Perfect for a rich curry or to carry spicy flavours. The layer of fat in the skin adds bags of taste to any sauce you make.
