The lamb equivalent of beef T-Bone steak, a morsel of organic lamb fillet on one side and a tasty circle of organic lamb loin on the other side of the bone. Fry them in a hot pan, the t-bone helps keep the flavour and structure of the meat, and conducts heat into the meat, the outer covering of fat bastes the meat as it cooks. Don’t forget to rest.
