A delicate lamb taste, these chops usually make up the 7 chop rack of lamb, but here are sliced and cooked separately. Fry in a hot pan, or grill, they make for a quick tasty supper, best left a little pink for maximum flavour. The eye muscle of tender meat is beautifully marbled, with the rib bone helps to keep its shape while cooking.
