We use nicely trimmed pieces of well marbled leg and shoulder meat so that you don?t have to retrim it but can use it as it comes from the vac-pack. All that fat through the pork meat keeps it moist and tender during a long slow cook making a casserole. Try searching for a pork with prune recipe, it looks absolutely delicious with onions garlic and thyme. Serve in summer with a herby couscous salad, or in winter with mashed potato.

Superb pork

Fabulous quality pork. I slow cooked it in the oven this afternoon in a casserole with dry cider, garlic, onion from my veg box and chopped mixed herbs from the garden added at the end. Absolutely superb casserole, beautiful texture and flavour. I dried and dipped the meat in seasoned tapioca flour before browning it and I think it added to the silky texture. From 2 packs of meat we had 2 portions tonight plus 3 portions worth are going in the freezer for later. Will order again.
