We use nicely trimmed pieces of well marbled leg and shoulder meat so that you don?t have to retrim it but can use it as it comes from the vac-pack. All that fat through the pork meat keeps it moist and tender during a long slow cook making a casserole. Try searching for a pork with prune recipe, it looks absolutely delicious with onions garlic and thyme. Serve in summer with a herby couscous salad, or in winter with mashed potato.
